i’ve been mourning the fact that i’ll never be able to eat poutine (unless i go to canada, that is) since the first time i heard of it, because you can’t buy cheese curds in shops here (or anywhere that isn’t north america, as i understand it). but i realized yesterday that i can make my own cheese curds! it doesn’t seem that hard, it’s just heating up milk and adding rennet or some kind of acid, and i even have vegetarian rennet that i bought in london. so i’ll do that. i just need to find me some cheesecloth.
